1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for GF option)

1 cup buttermilk (or dairy-free milk with 1 tbsp vinegar)

1 cup breadcrumbs (panko for extra crunch recommended)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

Cooking spray or oil for spraying

Prep the Cauliflower: Wash and thoroughly dry the cauliflower. Cut it into bite-sized florets, ensuring they are fairly uniform for even cooking.

    Make the Batter: In a mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Whisk together until well mixed. In another bowl, pour the buttermilk.

      Breading Station: Set up a breading station by placing the seasoned flour mixture, the buttermilk, and the breadcrumbs in separate shallow dishes.

        Coat the Cauliflower: Dip each cauliflower floret into the flour mixture, shaking off excess, then into the buttermilk, and finally in the breadcrumbs, pressing lightly to ensure the crumbs adhere. Set the coated florets aside on a plate.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Arrange in the Air Fryer: Lightly spray the air fryer basket with cooking spray. Place the breaded cauliflower bites in a single layer in the basket, ensuring they’re not overcrowded (you may need to work in batches).

              Air Fry the Bites: Cook for 12-15 minutes, shaking the basket halfway through for even cooking, until they are deeply golden and crispy.
