Crunchy Baked Falafel Balls

1 can (15 oz) chickpeas, drained and rinsed

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon baking powder

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup all-purpose flour (or chickpea flour for gluten-free)

2 tablespoons olive oil (plus more for greasing)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.

    Blend the Base: In a food processor, combine the drained chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, cayenne pepper (if using), salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky. Make sure not to over-blend; you want some texture.

      Add the Flour: Transfer the chickpea mixture to a large bowl. Gradually add the flour, mixing until the dough is hold together but not sticky. If it feels too wet, add a little more flour as necessary.

        Form the Balls: Using your hands, shape the mixture into 1- to 1.5-inch balls (about the size of a golf ball). Place each ball on the prepared baking sheet.

          Coat with Olive Oil: Lightly brush or spray each falafel ball with olive oil to help them crisp up while baking.

            Bake the Falafel: Place the baking sheet in the preheated oven and bake for 25-30 minutes, turning the falafel balls halfway through the baking time, until they are golden brown and crunchy.

              Serve: Remove the falafel from the oven and let them cool for a few minutes before serving. Enjoy them warm with tahini sauce, yogurt, or your favorite dipping sauce!
