1 medium head of cauliflower, cut into bite-sized florets

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 cup unsweetened almond milk (or any milk of your choice)

1 cup BBQ sauce (your favorite brand or homemade)

4 large whole wheat or gluten-free tortillas

1 cup shredded lettuce

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, combine panko breadcrumbs, garlic powder, smoked paprika, salt, and black pepper. In another bowl, pour the almond milk and add the cauliflower florets, tossing to coat.

      Coat the Cauliflower: Take each cauliflower floret and dip it into the flour, shaking off any excess, then into the almond milk, and finally roll it in the panko breadcrumb mixture until fully coated. Place them on the prepared baking sheet.

        Bake the Cauliflower: Bake in the preheated oven for 25-30 minutes, or until the florets are golden brown and crispy, turning them halfway through for even cooking.

          Toss in BBQ Sauce: Once baked, remove the cauliflower from the oven and transfer it to a large mixing bowl. Add BBQ sauce to the bowl and toss gently until the cauliflower is well coated.

            Assemble the Wraps: Warm the tortillas in a dry skillet or microwave for a few seconds until flexible. Layer each tortilla with shredded lettuce, BBQ cauliflower, avocado slices, and fresh cilantro.

              Roll the Wraps: Fold in the sides of the tortilla and roll tightly from the bottom, sealing the ingredients inside.
