Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1/2 cup buffalo sauce (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 large whole wheat or spinach wraps

1 cup shredded lettuce

1/2 cup diced tomatoes

1/2 cup shredded carrots

1/2 cup sliced avocado (optional)

1/4 cup ranch dressing (or yogurt-based dressing, for a healthier option)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Season and Bake the Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the chickpeas are well coated. Spread the chickpeas on the prepared baking sheet in a single layer.

Roast: Bake the chickpeas for 20-25 minutes, or until they are crispy and golden brown. Make sure to shake the pan halfway through to ensure even cooking.

Prepare the Wraps: While the chickpeas are baking, lay out your wraps. In the center of each wrap, place a handful of shredded lettuce, followed by diced tomatoes, shredded carrots, and avocado if using.

Assemble the Wraps: Once the chickpeas are ready, remove them from the oven and let them cool for a few minutes. Add a generous scoop of the crunchy buffalo chickpeas on top of the veggies. Drizzle with ranch dressing and sprinkle with fresh cilantro or parsley if desired.

Wrap It Up: Fold in the sides of the wrap, then roll it tightly from the bottom up to enclose the filling. Repeat this process for the remaining wraps.

Serve: Cut each wrap in half to reveal the colorful filling inside. Serve immediately with extra ranch dressing on the side for dipping.
