1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs

1 cup shredded sweetened coconut

1 cup panko bread crumbs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon lime juice

1 teaspoon cayenne pepper (optional for heat)

Prepare the Shrimp: In a medium bowl, toss the shrimp with lime juice, garlic powder, paprika, salt, black pepper, and cayenne pepper (if using). Ensure each shrimp is evenly coated. Let them marinate for about 15 minutes.

    Set Up the Breading Station: In one shallow dish, place the flour. In a second dish, whisk the eggs until well combined. In a third dish, mix the panko bread crumbs with the shredded coconut to create the coating.

      Bread the Shrimp: Take each marinated shrimp, dip it first into the flour, shaking off the excess. Then, dip it into the beaten eggs, and finally coat it thoroughly with the coconut-panko mixture. Set the coated shrimp on a plate and repeat until all shrimp are breaded.

        Heat the Oil: In a deep skillet or pot, heat about 1 inch of cooking oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by dropping a small piece of bread into the oil – if it bubbles and starts to brown, it’s ready.

          Fry the Shrimp: Carefully lower 4-5 shrimp at a time into the hot oil. Fry for 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil. Repeat with the remaining shrimp.
