Ingredients

2 cups pecan halves

1 cup rolled oats

1/2 cup shredded coconut (unsweetened)

1/2 cup maple syrup

1/4 cup almond butter (or peanut butter)

1/4 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/4 cup mini chocolate chips (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large mixing bowl, combine the pecan halves, rolled oats, shredded coconut, sea salt, and ground cinnamon. Stir well to evenly distribute the ingredients.

Prepare Wet Mixture: In a separate small saucepan, add the maple syrup and almond butter. Heat over low-medium heat, stirring until the mixture is well combined and slightly warmed (about 2-3 minutes). Remove from heat.

Combine Mixtures: Pour the warm maple-almond mixture over the dry ingredients. Use a spatula or wooden spoon to thoroughly mix everything together until the dry ingredients are well coated.

Shape into Clusters: Using your hands or a cookie scoop, form small clusters of the mixture and place them onto the prepared baking sheet. Leave space between each cluster as they will spread slightly during baking.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the clusters are golden brown. Keep an eye on them towards the end to prevent burning.

Add Chocolate Chips: If using, sprinkle the mini chocolate chips over the hot clusters immediately after taking them out of the oven. Allow them to melt slightly before mixing gently into the clusters.

Cool and Serve: Let the clusters cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely. Once cooled, serve immediately or store in an airtight container for up to one week.
