1 can (15 oz) of chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon nutritional yeast (optional, for added flavor)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel. Gently pat them dry to remove excess moisture, which helps them crisp up in the oven.

      Season the Chickpeas: In a large bowl, combine the chickpeas with olive oil, ranch seasoning, garlic powder, onion powder, paprika, salt, and black pepper. If you’re using nutritional yeast, add it at this stage as well. Toss everything together until the chickpeas are evenly coated with the seasoning mixture.

        Roast: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure they get crispy. Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through to promote even cooking.

          Check for Crispness: After 25 minutes, check the chickpeas for crunchiness; if they are still soft, continue roasting for an additional 5-10 minutes. Keep a close eye to prevent burning.
