2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon sea salt (to taste)

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures an ideal roasting environment for our chickpeas.

    Prepare Chickpeas: After draining and rinsing the chickpeas, place them on a clean kitchen towel or paper towels. Pat them dry thoroughly—removing moisture helps them crisp up.

      Make the Seasoning Mix: In a mixing bowl, combine the olive oil, minced garlic, smoked paprika, cumin, sea salt, black pepper, and cayenne pepper (if using). Stir well until the mix is evenly blended.

        Coat Chickpeas: Add the dry chickpeas to the bowl and toss them in the oil and seasoning mixture, ensuring they are evenly coated.

          Roast in the Oven: Line a baking sheet with parchment paper or foil for easy cleanup. Spread the seasoned chickpeas in a single layer on the baking sheet.
