Ingredients

1 ½ cups Biscoff cookies, crushed

⅓ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup Biscoff spread

1 tablespoon all-purpose flour

¼ teaspoon salt

Extra Biscoff cookies for garnish

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed Biscoff cookies and melted butter until evenly blended. Press this mixture firmly into the bottom of a greased 9x9-inch baking pan to form the crust. Bake for 10 minutes, then remove and let cool.

Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the sugar, mixing until well combined.

Incorporate the eggs: Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract, Biscoff spread, flour, and salt, and mix until everything is well combined and smooth.

Assemble the bars: Pour the cheesecake filling over the cooled Biscoff cookie crust. Spread it evenly with a spatula. Optionally, you can swirl additional Biscoff spread into the filling for a marbled effect.

Bake the bars: Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center slightly jiggles when you shake the pan. Remove from the oven and let cool completely at room temperature.

Chill the bars: Once cooled, refrigerate the cheesecake for at least 4 hours (or overnight) to let it set properly.

Cut and serve: Once chilled and set, lift the cheesecake from the pan using the edges of the parchment paper, if used. Cut into bars and garnish with extra crushed Biscoff cookies on top. Serve chilled and enjoy!
