2 tablespoons granulated sugar

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup Biscoff spread

1 teaspoon ground cinnamon

For the topping:

½ cup Biscoff spread (for drizzling)

Additional crushed Biscoff cookies (for garnish)

Whipped cream (optional, for serving)

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the crushed Biscoff cookies, melted butter, and granulated sugar until everything is well-mixed and resembles wet sand. Press the mixture firmly into the bottom of a lined 9x9-inch baking pan. Bake for 10 minutes, then remove from the oven and allow it to cool slightly.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the granulated sugar and continue mixing until well combined. Add the eggs one at a time, mixing well after each addition.
