Deconstructed Sushi Bowls

For the Sushi Rice:

1 ½ cups sushi rice

2 cups water

3 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

For the Toppings:

1 avocado, sliced

½ cucumber, thinly sliced

1 carrot, shredded

1 cup edamame, shelled

1 cup radishes, thinly sliced

½ pound sushi-grade fish (like salmon or tuna), cubed (or tofu for a vegetarian option)

Seaweed sheets for garnish, cut into strips

Pickled ginger, for serving

For the Soy Sauce Drizzle:

¼ cup soy sauce

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

1 teaspoon Sriracha (optional for spice)

Instructions
 

Prepare the Sushi Rice:

    Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce to low heat, cover, and simmer for about 18-20 minutes until the water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

      Season the Rice:

        While the rice is resting, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Once the rice has finished resting, gently fold this mixture into the rice using a wooden spatula. Allow the rice to cool to room temperature.

          Prepare the Bowl Ingredients:

            While the rice cools, prepare all toppings: slice the avocado, cucumber, and radishes, shred the carrot, and cook the edamame according to package instructions. If using fish, ensure it is cut into bite-sized cubes.

              Make the Soy Sauce Drizzle:

                In a small bowl, whisk together soy sauce, sesame oil, honey (or agave), and Sriracha if you like it spicy. Set aside.

                  Assemble the Bowls:

                    In serving bowls or plates, create a bed of sushi rice. Artfully arrange the sliced avocado, cucumber, shredded carrot, edamame, radishes, and cubed fish (or tofu) over the rice.

                      Garnish and Serve:

                        Drizzle the soy sauce mixture on top of the arranged ingredients. Decorate with strips of seaweed and a side of pickled ginger. Serve immediately and enjoy your deconstructed sushi bowls!
