Ingredients

1 cup macaroni pasta

2 cups sharp cheddar cheese, grated

1 cup whole milk

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 sheets nori (seaweed)

1 cup panko breadcrumbs

2 large eggs

Vegetable oil, for frying

Soy sauce, for dipping

Optional: green onions, chopped, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the macaroni and cook until al dente, according to package instructions. Drain and set aside.

Prepare the Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until it turns golden. Slowly add whole milk while continuously whisking to prevent lumps. Cook until the mixture thickens (around 3-5 minutes).

Add Cheese: Remove the sauce from heat and stir in grated cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until the cheese is completely melted and the sauce is smooth.

Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until well combined. Transfer the mac and cheese to a shallow dish and let it cool in the refrigerator for at least 1 hour to firm up.

          Assemble the Sushi Rolls:

            - Lay a sheet of nori on a bamboo sushi mat or a clean surface.

              - Spread a thin layer of chilled mac and cheese over the nori, leaving about 1 inch on the edge closest to you.

                - Carefully roll the sushi away from you, using the mat to help keep it tight. Seal the edge with a little water, ensuring the roll stays together. Repeat this step for the remaining nori sheets.

                  Prepare for Frying:

                    - In a shallow bowl, beat the eggs. In another bowl, place the panko breadcrumbs.

                      - Cut each sushi roll into 4 equal pieces. Dip each piece in the egg mixture, letting the excess drip off, then coat in panko breadcrumbs.

Deep-Fry the Rolls: In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Fry the sushi rolls in batches, being careful not to overcrowd the pot, for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve: Arrange the deep-fried mac & cheese sushi rolls on a serving platter and drizzle with soy sauce. Garnish with chopped green onions if desired. Serve hot and enjoy this quirky twist on sushi!
