Ingredients
  

  • 4 cups low-sodium chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh thyme, chopped
  • 0.5 teaspoon black pepper
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour or cornstarch

Instructions
 

  • Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  • Add Carrots and Celery: Stir in the diced carrots and celery, cooking for another 5 minutes until they start to soften.
  • Incorporate Mushrooms: Add the sliced mushrooms to the pot, cooking for an additional 4-5 minutes until they release their moisture and become tender.
  • Add Seasonings: Sprinkle in the dried thyme, black pepper, soy sauce, and Worcestershire sauce. Stir well to combine and let cook for another minute to release the flavors.
  • Make the Gravy: In a small bowl, mix the flour with a few tablespoons of the broth to create a slurry. Slowly add this mixture back into the pot while continuously stirring to avoid lumps.
  • Incorporate Broth: Pour in the remaining chicken or vegetable broth. Stir well to combine everything. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 15-20 minutes, allowing the flavors to meld and the broth to thicken slightly.
