For the Burger Patties:

1 pound ground beef (80% lean)

1/2 pound ground lamb

1 small onion, finely minced

2 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon fresh thyme, chopped

1/2 teaspoon salt

1/2 teaspoon black pepper

For the Toppings:

4 slices of aged cheddar cheese

4 brioche burger buns

4 slices of crispy bacon

1 cup arugula or baby spinach

1 large tomato, sliced

1/2 cup Guinness-infused caramelized onions (see below)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

For the Guinness Caramelized Onions:

1 large onion, thinly sliced

1 tablespoon olive oil

2 tablespoons butter

1/2 cup Guinness beer

Pinch of salt

Pinch of sugar

Prepare Guinness Caramelized Onions:

    - In a large skillet, heat olive oil and butter over medium heat. Once melted, add the sliced onions and a pinch of salt. Sauté for about 5 minutes, stirring occasionally until they begin to soften.

      - Add a pinch of sugar to help with caramelization and continue to cook for about 15 minutes, stirring occasionally, until the onions are golden brown.

        - Pour in the Guinness and let it simmer for another 10-15 minutes until the liquid reduces and thickens. Set aside.

          Make the Burger Patties:

            - In a large bowl, combine the ground beef, ground lamb, minced onion, minced garlic, Worcestershire sauce, thyme, salt, and black pepper. Mix gently until just combined; do not overwork the meat.

              - Divide the mixture into four equal portions and shape them into patties, making a small indentation in the center of each to prevent them from puffing up during cooking.

                Cook the Patties:

                  - Preheat your grill or a skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on one side.
