1 pound flank steak, thinly sliced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

4 large flour tortillas

2 cups shredded Monterey Jack cheese

1 cup thinly sliced bell peppers (any color)

1 medium red onion, thinly sliced

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Marinate the Steak: In a medium bowl, combine the flank steak slices with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Toss well to coat the steak evenly and let it marinate for about 15 minutes.

    Cook the Steak: Heat a large skillet or grill pan over medium-high heat. Add the marinated flank steak and cook for 3-4 minutes until browned and cooked through. Remove from the pan and set aside.

      Sauté the Veggies: In the same skillet, add the sliced bell peppers and red onion. Sauté for 3-5 minutes until they are tender and slightly caramelized.

        Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle half of it with cheese, followed by a generous layer of cooked steak, sautéed veggies, and then top with more cheese. Fold the tortilla in half, pressing it gently to seal.

          Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Cook each quesadilla for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas.

            Slice and Serve: Remove the quesadillas from the skillet and let them sit for a minute before slicing into wedges. Serve with fresh cilantro, salsa, and sour cream on the side.
