2 cups sticky rice (or glutinous rice)

1 can (14 oz) coconut milk

1 cup sugar

1/2 tsp salt

1 tsp vanilla extract

1 cup shredded coconut (unsweetened)

1/2 cup water

Optional: fresh mango slices, toasted sesame seeds, or chopped nuts for garnish

Instructions
 

Prepare the Sticky Rice: Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours, preferably overnight.

    Cook the Rice: Drain the soaked rice and place it in a steamer basket lined with cheesecloth or parchment paper. Steam over boiling water for about 30-40 minutes, or until the rice is tender and translucent.

      Make the Coconut Sauce: In a saucepan, combine the coconut milk, sugar, salt, and vanilla extract. Heat over medium heat, stirring until the sugar dissolves and the mixture is well combined but do not bring it to a boil. Reserve about 1/2 cup of this mixture for drizzling later.

        Combine Rice and Coconut: Once the rice is done steaming, transfer it to a large bowl. Pour the coconut sauce over the hot rice and mix gently to combine. Add in the shredded coconut, mixing until the rice is fully coated and sticky.

          Set the Delight: Line a square baking dish (8x8 inches) with parchment paper for easy removal. Transfer the coconut rice mixture into the dish, spreading it out evenly. Press down gently with a spatula to create an even layer.

            Chill: Cover the dish with plastic wrap and refrigerate for at least 1-2 hours, or until firm.

              Serve: Once set, cut the chilled coconut delight into squares. Drizzle with the reserved coconut sauce and garnish with fresh mango slices, toasted sesame seeds, or chopped nuts if desired.
