6 large eggs

1/2 cup diced green bell pepper

1/2 cup diced red bell pepper

1/2 cup diced onion

1/2 cup diced cooked ham

1/2 cup shredded cheddar cheese

2 tablespoons milk

1 tablespoon olive oil or butter

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Prep the Vegetables: Begin by washing and dicing the green and red bell peppers and onion into small pieces. Set them aside.

    Whisk the Eggs: In a large bowl, crack the eggs and add the milk, salt, and pepper. Using a whisk or fork, beat the eggs until well combined and slightly frothy.

      Cook the Ham: In a large skillet over medium heat, add the olive oil or butter. Once hot, add the diced ham and sauté for about 2-3 minutes until lightly browned and heated through.

        Sauté the Vegetables: Add the diced onion and bell peppers to the skillet with the ham. Sauté for an additional 4-5 minutes, stirring occasionally, until the vegetables are soft and slightly caramelized.

          Add the Eggs: Pour the whisked eggs into the skillet over the ham and vegetables. Allow the eggs to sit for a minute without stirring, then gently stir with a spatula to scramble.

            Add Cheese: When the eggs are mostly set but still slightly runny, sprinkle the shredded cheddar cheese evenly over the top. Allow it to melt while the eggs finish cooking.
