2 cups fresh or frozen pineapple chunks

1 cup coconut milk (full-fat for creaminess)

1/2 cup sugar (adjust to taste)

1 tablespoon lime juice

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

If using fresh pineapple, peel, core, and chop it into small chunks. If using frozen, ensure it’s slightly softened for easier blending.

    In a blender, combine the pineapple chunks, coconut milk, sugar, lime juice, vanilla extract, and a pinch of salt.

      Blend on high speed until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the blender to ensure everything is well combined.

        Taste the mixture and adjust the sweetness if desired by adding more sugar. Blend again to incorporate.

          Pour the mixture into a freezer-safe container and smooth out the top with a spatula.

            Freeze for about 2-3 hours or until it reaches a soft-serve consistency.

              Once frozen, scoop the Dole Whip into bowls or cones. Optional: garnish with fresh pineapple chunks or a sprinkle of shredded coconut.
