Ingredients

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or almond flour for gluten-free)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup water

1/2 cup buffalo sauce (store-bought or homemade)

2 tablespoons melted butter (optional for extra richness)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Cauliflower: Begin by washing your cauliflower and cutting it into bite-sized florets. Make sure they're roughly the same size for even cooking.

Make the Batter: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add water while stirring until you have a smooth batter that can coat the cauliflower florets.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's well-coated, and then let any excess batter drip off. Place the coated florets on a plate or tray.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Cauliflower: Arrange the coated cauliflower florets in the air fryer basket in a single layer, ensuring they aren’t overcrowded. You may need to work in batches. Air fry for 10 minutes, flipping halfway through, until the batter is golden and crispy.

Toss in Buffalo Sauce: In a separate bowl, combine the buffalo sauce with melted butter (if using). Once the cauliflower is done, remove it from the air fryer and toss it in the buffalo sauce mixture until evenly coated.

Final Cook: Return the sauced cauliflower back to the air fryer basket. Cook for an additional 5 minutes to allow the sauce to stick and the flavors to meld.

Garnish and Serve: Once done, remove the cauliflower from the air fryer and garnish with chopped parsley. Serve hot with ranch or blue cheese dressing for dipping if desired.
