1 box of Jiffy Corn Muffin Mix

1 large egg

1/3 cup milk (or dairy alternative)

1/4 cup melted butter (or vegetable oil)

1/2 cup corn kernels (optional, for added sweetness and texture)

1 tablespoon sugar (optional, if you like a sweeter cornbread)

Cooking spray (for greasing)

Mix the Batter: In a large mixing bowl, combine the Jiffy Corn Muffin Mix, egg, milk, melted butter, and sugar (if using). Stir until just combined. If you’re adding corn kernels, fold them in gently.
