Ingredients

6 large eggs

1/4 cup milk (or a dairy-free alternative)

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

1/2 cup baby spinach, chopped

1/2 cup shredded cheese (cheddar, feta, or your favorite)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon paprika (optional)

Cooking spray or olive oil for greasing

Instructions

Prep the Air Fryer: Preheat your air fryer to 300°F (150°C). Lightly grease the muffin pan or silicone molds with cooking spray or olive oil to prevent sticking.

Whisk the Eggs: In a mixing bowl, crack the eggs and add the milk, salt, pepper, garlic powder, and paprika. Whisk until well combined.

Add Vegetables and Cheese: Stir in the diced bell peppers, onions, chopped spinach, and shredded cheese until evenly distributed throughout the egg mixture.

Pour Mixture into Molds: Carefully pour the egg mixture into the prepared muffin pan or silicone molds, filling each one about 2/3 full to allow room for rising.

Air Fry the Frittatas: Place the filled pan in the air fryer basket and cook at 300°F (150°C) for 10-12 minutes, or until the frittatas are puffed and a toothpick inserted in the center comes out clean.

Cool and Serve: Once cooked, allow the frittatas to cool for a few minutes before gently removing them from the mold. Serve warm or at room temperature. These can be enjoyed immediately or stored in an airtight container in the refrigerator for up to 4 days.
