Prepare the Veggies: Grate the zucchini and carrots, then place them in a clean kitchen towel and twist to remove excess moisture. This step is crucial for getting crispy fritters!

    Mix the Fritter Batter: In a large mixing bowl, combine the grated zucchini, carrots, bell peppers, onions, chickpea flour, Parmesan cheese (if using), eggs, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined and form a cohesive batter.

      Shape the Fritters: Using your hands, form the mixture into small patties (about 3 inches wide and 1/2 inch thick). Place them on a plate or a baking sheet lined with parchment paper.
