Easy Air Fryer Veggie Quesadillas for Dinner

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers (mixed colors), diced

1 cup zucchini, diced

1 cup corn (fresh, frozen, or canned)

1/2 cup red onion, diced

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray

Fresh cilantro (for garnish)

Salsa or sour cream (for serving)

Instructions
 

Prep the Veggies: In a large mixing bowl, combine the diced bell peppers, zucchini, corn, and red onion. Add the cumin, chili powder, garlic powder, salt, and pepper. Mix well until the veggies are evenly coated with the spices.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. On each tortilla, sprinkle a generous layer of shredded mozzarella and cheddar cheese, followed by a layer of the spiced veggie mixture. Sprinkle a little more cheese on top to help the quesadilla stick together. Top with another tortilla.

      Air Fryer Preheat: Preheat your air fryer to 375°F (190°C) for about 5 minutes to ensure even cooking.

        Cook the Quesadillas: Lightly spray the outside of the assembled quesadillas with olive oil spray. Place one or two quesadillas (depending on the size of your air fryer) in the basket. Cook for 6-8 minutes, flipping halfway through, until the tortillas are golden brown and crispy, and the cheese is melted.

          Remove and Slice: Once cooked, carefully remove the quesadillas from the air fryer and let them rest for a minute. Using a sharp knife or pizza cutter, slice each quesadilla into wedges.

            Garnish and Serve: Transfer the quesadilla wedges to a plate, garnish with fresh cilantro, and serve with salsa or sour cream on the side for dipping.
