4 whole wheat tortillas

1 cup shredded cheese (cheddar or mozzarella works great)

1/2 cup bell peppers, finely chopped (any color)

1/2 cup spinach, chopped

1/4 cup corn (canned or frozen)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Olive oil spray

Optional: sour cream or salsa for dipping

Instructions
 

Prepare the Veggies: In a bowl, combine the chopped bell peppers, spinach, corn, garlic powder, onion powder, salt, and pepper. Mix until well combined.

    Assemble the Quesadillas: Lay one tortilla on a clean surface. Sprinkle half of the tortilla with a generous amount of shredded cheese. Top the cheese with a portion of the veggie mixture, then sprinkle some more cheese on top before folding the tortilla in half.

      Air Frying Time: Preheat your air fryer to 375°F (190°C). Lightly spray the outside of the folded quesadilla with olive oil spray for a crispy finish. Place the quesadilla in the air fryer basket. You may need to do this in batches, depending on the size of your air fryer.

        Cook Until Golden: Air fry the quesadilla for 6-8 minutes, flipping halfway through, until the tortillas are golden brown and the cheese is melted.

          Slice and Serve: Once cooked, remove the quesadilla from the air fryer and let it cool for a minute before cutting it into wedges. Serve with optional dipping sauces like sour cream or salsa.
