1 cup bell peppers (any color), diced

1 cup zucchini, diced

1 cup corn (frozen or fresh)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

For the Avocado Sauce:

1 ripe avocado

1/2 cup plain Greek yogurt (or a dairy-free alternative)

1 tablespoon lime juice

1 clove garlic, minced

Salt and pepper to taste

Water as needed for thinning

For Toppings:

Chopped fresh cilantro

Diced red onion

Lime wedges

Crumbled feta cheese or dairy-free cheese (optional)

Instructions
 

Prepare the Veggies:

    - In a large bowl, combine the diced bell peppers, zucchini, and corn. Drizzle the olive oil over the veggies and sprinkle with chili powder, cumin, garlic powder, salt, and pepper. Toss until everything is well-coated.

      Air Fry the Veggies:
