Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar (plus more for dusting)

1 teaspoon vanilla extract

1 teaspoon almond extract

2 cups all-purpose flour

1/2 cup finely chopped almonds

1/4 teaspoon salt

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.

Add the vanilla extract and almond extract to the butter mixture, beating until well combined.

Gradually sift in the all-purpose flour, mixing well after each addition.

Stir in the chopped almonds and salt until the dough comes together.

Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each cookie.

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Remove the cookies from the oven and let them cool slightly on the baking sheet for 5 minutes.

While they are still warm, roll the cookies in powdered sugar to coat them generously.

Allow to cool completely on a wire rack, then roll in powdered sugar again before serving for an extra snowy effect.
