Ingredients

1 can (14.75 oz) pink salmon, drained and flaked

1/2 cup breadcrumbs (Panko or regular)

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper (red or green for color)

1/4 cup fresh parsley, chopped

1 large egg

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Olive oil or butter for frying

Instructions

Prepare the Mixture: In a large mixing bowl, combine the drained salmon, breadcrumbs, chopped onion, bell pepper, and parsley. Mix well to evenly distribute the ingredients.

Mix the Wet Ingredients: In a separate small bowl, whisk together the egg, mayonnaise, Dijon mustard, garlic powder, Worcestershire sauce, and a pinch of salt and pepper until well combined.

Combine: Pour the egg mixture into the salmon mixture. Use your hands or a spatula to gently combine everything until just mixed—avoid overworking to keep the patties tender.

Form Patties: Divide the salmon mixture into 6-8 equal portions, shaping each portion into a patty about 1/2 inch thick.

Heat the Pan: In a large skillet, heat 2 tablespoons of olive oil or butter over medium heat until hot.

Cook the Patties: Carefully add the patties to the skillet, leaving enough space between each one. Cook for about 4-5 minutes on each side, or until they are golden brown and crisp. If the patties are browning too quickly, reduce the heat to medium-low.

Serve: Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve warm, garnished with extra parsley and a squeeze of lemon if desired.
