Easy Beef and Broccoli Stir-Fry for Busy Nights

1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain

4 cups broccoli florets

2 tablespoons vegetable oil (divided)

3 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce (low sodium recommended)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon honey

Cooked rice or quinoa for serving

Sesame seeds and sliced green onions for garnish

Instructions
 

Prep the Marinade: In a medium bowl, combine the soy sauce, oyster sauce, honey, cornstarch, and water. Mix well and add the sliced beef. Make sure the beef is evenly coated, and let it marinate for about 10-15 minutes.

    Blanch the Broccoli: While the beef is marinating, bring a pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green but still crisp. Drain and set aside.

      Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer, cooking for 2-3 minutes without moving it. Flip and cook for another 2 minutes or until just cooked through. Remove the beef from the pan and set aside.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

          Combine Ingredients: Return the beef to the skillet and add the blanched broccoli. Stir-fry everything together for about 2 minutes to combine and heat through.

            Serve: Remove from heat. Serve immediately over cooked rice or quinoa, garnished with sesame seeds and sliced green onions.
