Easy Beef and Broccoli Stir-Fry in 30 Minutes

1 lb (450g) flank steak, thinly sliced against the grain

4 cups broccoli florets

3 tablespoons soy sauce (low sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, minced

1/2 cup beef broth (or water)

1 teaspoon sesame oil (optional)

Salt and pepper to taste

Cooked rice or noodles, for serving

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak, 1 tablespoon soy sauce, 1 tablespoon cornstarch, and a pinch of salt and pepper. Toss to coat the beef evenly. Let it marinate for about 10 minutes while you prep the veggies.

    Prepare the Broccoli: In a large pot, bring water to a boil. Add the broccoli florets and blanch for 2 minutes until tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking. Once cooled, drain again and set aside.

      Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for 2-3 minutes, without stirring, until browned. Flip the beef and cook for another 1-2 minutes until fully cooked. Remove the beef from the skillet and set aside.

        Sauté the Aromatics: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

          Combine Beef and Broccoli: Return the beef to the skillet and add the blanched broccoli. Pour in the beef broth, remaining 2 tablespoons of soy sauce, and 2 tablespoons of oyster sauce. Stir everything together, and let it cook for another 2-3 minutes, allowing the sauce to thicken slightly.

            Finish and Serve: Drizzle with sesame oil if using. Give it a final stir, taste, and adjust seasoning as needed. Serve hot over cooked rice or noodles, garnished with sesame seeds or green onions if desired.
