4 large eggs

1 cup bean sprouts

1/2 cup chopped green onions (scallions)

1/2 cup chopped bell peppers (red or green)

1/4 cup shredded carrots

1/2 cup cooked shrimp or chicken (optional)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper, to taste

2 tablespoons vegetable oil (for frying)

Instructions
 

Prepare the Batter: In a large mixing bowl, crack the eggs and beat them until they are well mixed. Add soy sauce, oyster sauce, sesame oil, salt, and pepper, and stir until combined.

    Add Vegetables: Fold in the bean sprouts, chopped green onions, bell peppers, shredded carrots, and cooked shrimp or chicken, if using. Mix until all ingredients are evenly coated in the egg mixture.

      Heat the Oil: In a large non-stick skillet or frying pan, heat 2 tablespoons of vegetable oil over medium heat.

        Cook the Egg Foo Young: Ladle approximately 1/2 cup of the egg mixture into the skillet for each pancake. Flatten slightly with a spatula. Cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat this step, adding more oil if necessary, until all the mixture is cooked.

          Serve: Remove the egg foo young from the skillet and place on a paper towel to absorb excess oil. Serve hot with additional soy sauce or sweet and sour sauce on the side, if desired.
