4 large flour tortillas

4 large eggs

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or diced cooked ham)

1/2 cup diced bell peppers (red and green)

1/4 cup chopped green onions

1/4 teaspoon paprika

Salt and pepper to taste

Olive oil or cooking spray

Salsa or hot sauce, for serving (optional)

Prep the Filling: In a medium bowl, crack the eggs and whisk them until well combined. Season with paprika, salt, and pepper. Stir in the crumbled sausage, diced bell peppers, and chopped green onions.

    Cook the Eggs: Heat a non-stick skillet over medium heat and add a small drizzle of olive oil or spray the pan with cooking spray. Pour the egg mixture into the skillet and scramble gently until fully cooked, about 3-5 minutes. Remove from heat.

      Assemble the Quesadillas: On a clean flat surface, place one tortilla down. Sprinkle half of the tortilla with 1/2 cup of shredded cheddar cheese, then add a generous portion of the cooked egg mixture on top. Fold the tortilla in half to enclose the filling. Repeat with the remaining tortillas.

        Cook the Quesadillas: In the same skillet (or a clean one, if preferred), heat a drizzle of olive oil over medium heat. Place one quesadilla in the skillet and cook for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat for the remaining quesadillas.
