Easy Charcuterie Pasta Bake

12 oz penne pasta

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup sliced salami

1 cup diced ham

1 cup pepperoni slices

1 cup cherry tomatoes, halved

1 cup black olives, sliced

2 cups shredded mozzarella cheese

1 cup ricotta cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3 minutes until translucent. Stir in the minced garlic and bell pepper, and sauté for an additional 2-3 minutes until softened.

        Mix in the Meats: Add the salami, ham, and pepperoni to the skillet. Cook for about 5 minutes, stirring frequently, until they are slightly crispy. Toss in the halved cherry tomatoes and sliced olives, and stir to combine.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed meats and veggies, mozzarella cheese, ricotta cheese, Italian seasoning, salt, and pepper. Mix well until everything is evenly coated.

            Prepare for Baking: Transfer the pasta mixture into a large greased baking dish. Sprinkle extra mozzarella cheese and grated Parmesan on top if desired.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the cheese is bubbly and golden.

                Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil leaves before serving.
