Easy Cheesy Hamburger Rice Casserole Recipe

1 lb (450g) ground beef

1 cup uncooked long-grain white rice

2 cups beef broth

1 cup shredded cheddar cheese

1 cup diced tomatoes (canned or fresh)

1 medium onion, diced

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper, to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

Optional: Chopped fresh parsley, for garnish

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and garlic to the skillet with the browned beef. Sauté for another 3-4 minutes, until the onion is translucent.

        Mix Ingredients: Stir in the uncooked rice, beef broth, diced tomatoes (with their juice), Italian seasoning, paprika, and frozen mixed vegetables. Season with salt and pepper to taste.

          Transfer to Casserole Dish: Pour the beef and rice mixture into a greased 9x13-inch casserole dish. Spread it evenly.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes.

              Add Cheese: After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese on top of the casserole. Return to the oven uncovered and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove the casserole from the oven and let it sit for about 5 minutes. Garnish with chopped fresh parsley if desired and serve warm.
