Easy Cheesy Spinach and Chicken Stuffed Peppers

4 large bell peppers (any color)

1 pound cooked chicken breast, shredded

2 cups fresh spinach, chopped

1 cup cooked rice (white or brown)

1 cup shredded mozzarella cheese

½ cup cream cheese, softened

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the peppers: Slice the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly to keep them standing upright. Place them in a baking dish cut side up.

      Sauté the spinach: In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté for about 30 seconds, until fragrant. Add the chopped spinach and cook until wilted, roughly 2-3 minutes. Remove from heat.

        Mix the filling: In a large bowl, combine shredded chicken, sautéed spinach, cooked rice, mozzarella cheese, cream cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well until everything is evenly combined and creamy.

          Stuff the peppers: Spoon the chicken and spinach mixture into each hollowed bell pepper, packing it down gently. Top each stuffed pepper with a little extra mozzarella cheese if desired.

            Bake: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.
