1 lb (450g) boneless, skinless chicken breasts, diced

1 medium head of cauliflower, riced (about 4 cups)

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Prep the Cauliflower: Wash the cauliflower and cut it into florets. Use a food processor or box grater to rice the cauliflower until it resembles small grains of rice. Set aside.

    Cook the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced chicken, seasoning with salt, pepper, paprika, and Italian seasoning. Cook for about 5-7 minutes until the chicken is lightly browned and cooked through. Remove from skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and garlic over medium heat until the onion is translucent, about 2-3 minutes.

        Add the Cauliflower Rice: Stir in the riced cauliflower to the skillet with the onion and garlic. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.

          Combine Ingredients: Return the cooked chicken to the skillet and add both the shredded cheddar and grated Parmesan cheese. Stir well until the cheeses are melted and everything is nicely combined, about 2-3 minutes. Taste and adjust seasoning with more salt or pepper if necessary.
