Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

1 pound cooked chicken breast, shredded

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

1 cup frozen peas

1 tablespoon lemon juice (optional)

Fresh parsley for garnish (optional)

Instructions

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Cook for about 5-7 minutes until the vegetables are softened.

Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

Incorporate Chicken and Broth: Add the shredded chicken to the pot and pour in the chicken broth. Stir in the dried thyme, dried parsley, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.

Creamy Base: Slowly pour in the heavy cream, stirring to combine. Simmer for another 5-10 minutes until the soup thickens slightly.

Final Touches: Add the frozen peas and lemon juice (if using), then season with more salt and pepper to taste. Cook for an additional 2-3 minutes until the peas are heated through.

Serve: Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve warm with crusty bread on the side.
