1 lb fresh spinach, washed and trimmed

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sugar

½ teaspoon sesame seeds, toasted

1 green onion, finely chopped

A pinch of red pepper flakes (optional)

Blanch the Spinach: Bring a large pot of water to a boil. Add the spinach leaves and blanch for about 30 seconds until they are just wilted. Drain the spinach in a colander and immediately rinse under cold water to stop the cooking process. Gently squeeze out excess water and set aside.
