Easy Loaded Cheesy Pocket Tacos

1 pound ground beef or turkey

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

8 small flour tortillas

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, diced

1 cup salsa

1 cup sour cream (for serving)

1 avocado, diced (for garnish)

Fresh cilantro, chopped (for garnish)

Cooking oil spray or olive oil for cooking

Instructions
 

Cook the Meat: In a large skillet over medium heat, add a splash of cooking oil. Once hot, add the ground beef or turkey and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.

    Season the Meat: Sprinkle the taco seasoning over the cooked meat. Add a splash of water (about 1/4 cup), stir well, and let it simmer for an additional 3-5 minutes until the meat is well-coated and the flavors meld.

      Prepare the Filling: In a mixing bowl, combine the cooked meat, black beans, corn, red onion, and half of the cheddar and mozzarella cheese. Mix until evenly combined.

        Stuff the Tortillas: Take a flour tortilla and place about 2-3 tablespoons of the filling mixture in the center. Fold the sides in and roll it up tightly to form a pocket. Repeat with the remaining tortillas and filling.

          Cook the Tacos: Wipe out the skillet and spray it lightly with cooking oil or drizzle with olive oil. Place the taco pockets seam-side down in the skillet and cook over medium heat for about 3-4 minutes on each side, or until golden brown and crispy.

            Melt the Cheese: During the last minute of cooking, sprinkle the remaining cheddar and mozzarella cheese on top of the taco pockets. Cover the skillet with a lid to allow the cheese to melt.

              Serve: Carefully remove the cheesy pocket tacos from the skillet. Serve hot with salsa, sour cream, diced avocado, and fresh cilantro for garnish.
