9-10 corn tortillas

1 pound ground beef or turkey (or a vegetarian alternative)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

2 cups shredded Mexican cheese blend

1 cup salsa

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed. Stir in chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix well to incorporate the spices.

      Add the Beans and Veggies: Add the black beans, diced tomatoes with green chilies, and corn to the skillet. Stir everything together and let it simmer for about 5 minutes, allowing the flavors to meld.

        Prepare the Baking Dish: In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom to prevent sticking.

          Layering the Lasagna:

            - Place 3 corn tortillas over the salsa.

              - Spoon ⅓ of the meat and bean mixture over the tortillas, then sprinkle ⅓ of the shredded cheese on top.

                - Repeat the process two more times (adding 3 tortillas, then the meat mixture, and finishing with cheese).

                  - End with a final layer of tortillas on top, covering with any remaining salsa and a generous layer of cheese.

                    Bake: Cover the baking dish with aluminum foil (making sure the foil does not touch the cheese) and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and slightly golden.

                      Rest and Serve: Once baked, remove the lasagna from the oven and let it rest for about 10 minutes before slicing. Garnish with fresh cilantro if desired. Serve with sour cream and extra salsa on the side.
