1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

1/2 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/2 cup milk (dairy or plant-based)

2 large eggs

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

Optional add-ins: 1/2 cup raisins or chopped nuts (e.g. walnuts or pecans)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well to evenly distribute all the dry ingredients.

      Add Wet Ingredients: In the same bowl, add the grated carrots, honey (or maple syrup), applesauce, milk, and eggs. Stir until everything is just combined. Be careful not to overmix; a few lumps are okay.

        Incorporate Add-ins: If you’re using raisins or nuts, fold them into the batter at this stage.

          Scoop into Muffin Tin: Using a spoon or ice cream scoop, distribute the batter evenly among the muffin cups, filling each about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool and Enjoy: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
