Ingredients
  

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice, rinsed and drained

2 cups low-sodium chicken broth

1 cup shredded cheddar cheese

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken pieces, season with salt, pepper, paprika, and oregano. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the diced onion and garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Combine Rice and Broth: Stir in the rinsed rice, chicken broth, and the frozen mixed vegetables. Bring the mixture to a boil.

        Add Chicken Back: Once boiling, reduce the heat to low, and return the cooked chicken to the skillet. Stir everything together, cover, and let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed the liquid.

          Cheesy Finish: After the rice has cooked, remove the skillet from heat and sprinkle the shredded cheddar cheese over the top. Cover again for a few minutes until the cheese melts.

            Garnish and Serve: Once the cheese has melted, fluff the rice with a fork, garnish with fresh parsley if desired, and serve hot straight from the pan!
