Prepare the Pork: Start by patting the pork tenderloin pieces dry with paper towels. Season generously with salt, pepper, smoked paprika, thyme, and rosemary.
Sear the Pork: In a large skillet or frying pan, heat olive oil over medium-high heat. Once hot, add the seasoned pork pieces and sear for about 4-5 minutes until they are browned on all sides. Remove the pork from the pan and set aside.
Make the Garlic Butter: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant – be careful not to burn it!
Combine Ingredients: Add the seared pork back into the skillet, along with the halved cherry tomatoes. Stir well to coat everything in the garlic butter. Cook for another 3-4 minutes until the tomatoes soften.
Add the Spinach: Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted. Squeeze the juice of one lemon over the mixture and stir well to combine.
Serve: Remove from heat and garnish with chopped fresh parsley. Serve the garlic butter pork warm over rice, quinoa, or alongside crusty bread to soak up the delicious sauce.
