Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 lemon (zest and juice)

3 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

Fresh parsley, chopped for garnish

Instructions

Prep the Ingredients: Begin by cleaning the shrimp and trimming the asparagus. Make sure to mince the garlic and zest the lemon before juicing it for easy use later.

Heat the Pan: In a large skillet or pan, heat 2 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Sauté the Asparagus: Add the asparagus to the pan. Season with salt, pepper, and smoked paprika. Cook for 4-5 minutes, tossing occasionally, until the asparagus is tender yet crisp.

Cook the Shrimp: Push the asparagus to the sides of the pan, then add the shrimp to the center. Drizzle the remaining tablespoon of olive oil over the shrimp, along with the lemon juice, lemon zest, and red pepper flakes (if using). Cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and opaque.

Combine and Garnish: Once the shrimp are fully cooked, toss everything together in the pan to combine flavors. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.

Serve: Remove from heat, garnish with freshly chopped parsley, and serve immediately. This dish pairs wonderfully with a side of rice or crusty bread to soak up the delicious juices!
