Ingredients

2 large flatbreads (store-bought or homemade)

2 ripe peaches, sliced thinly

1 cup fresh mozzarella cheese, shredded

2 tablespoons olive oil

1 tablespoon balsamic glaze

1 teaspoon fresh basil, chopped (plus more for garnish)

Salt and pepper, to taste

Optional: a pinch of red pepper flakes for a kick

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper.

Brush with Olive Oil: Drizzle the olive oil evenly over each flatbread, using a brush or the back of a spoon to spread it out.

Add Cheese Layer: Sprinkle the shredded mozzarella cheese generously over both flatbreads.

Layer on Peaches: Arrange the sliced peaches evenly across the cheese, slightly overlapping them for a beautiful presentation.

Season: Sprinkle the fresh chopped basil, salt, pepper, and red pepper flakes (if using) over the flatbreads.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges of the flatbread are crispy and the cheese is bubbly.

Drizzle Balsamic Glaze: Once out of the oven, immediately drizzle balsamic glaze over the top of the flatbreads for a sweet-tangy finish.

Garnish and Serve: Finish with additional fresh basil leaves for garnish and cut into slices. Serve warm!
