4 medium potatoes (Yukon Gold or red), diced into 1-inch cubes

3 large carrots, sliced into ½-inch thick rounds

2 medium zucchinis, chopped into half-moons

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Veggies: In a large bowl, combine the diced potatoes, sliced carrots, and chopped zucchini.

      Seasoning Mix: In a small bowl, whisk together the olive oil, garlic powder, onion powder, dried thyme, paprika, salt, and pepper.
