1 pound of smoked sausage (e.g., kielbasa or Italian sausage), sliced into rounds

2 cups of Brussels sprouts, halved

1 red bell pepper, diced

1 yellow onion, sliced

2 medium zucchinis, sliced into half-moons

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, etc.)

½ teaspoon red pepper flakes (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper for easier cleanup.

    Prepare the Veggies: In a large bowl, combine Brussels sprouts, bell pepper, onion, and zucchini.

      Season the Mixture: Drizzle 2 tablespoons of olive oil over the veggies. Add garlic powder, onion powder, Italian herbs, red pepper flakes (if using), salt, and pepper. Toss everything together until the vegetables are well-coated in the oil and spices.
