Ingredients

1 lb boneless, skinless chicken breasts, sliced into thin strips

1 large bell pepper (red, yellow, or green), sliced

1 medium onion, sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Tortillas (flour or corn, your choice)

Sliced avocado, sour cream, and salsa (for serving)

Instructions

Prepare the Chicken: In a large bowl, combine chicken strips with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Mix well to coat the chicken evenly with the spices.

Heat the Skillet: Preheat a large skillet over medium-high heat. Once hot, add the seasoned chicken to the skillet and cook for around 5-7 minutes, stirring frequently until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).

Add Vegetables: When the chicken is nearly done, add sliced bell pepper and onion to the skillet. Continue to cook for an additional 4-5 minutes until the vegetables are tender and slightly caramelized.

Finish with Lime: Remove the skillet from heat, and drizzle the lime juice over the chicken and vegetables. Toss to combine all the flavors.

Warm the Tortillas: In a separate dry skillet, warm the tortillas on low heat for about 30 seconds on each side, or until they’re pliable.

Serve: To assemble the fajitas, fill each tortilla with the chicken and vegetable mixture. Top with fresh cilantro, sliced avocado, sour cream, and salsa as desired.

Enjoy: Roll up the tortillas and enjoy your zesty skillet chicken fajitas while they're hot!
