4 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 tablespoon Worcestershire sauce

1/2 cup sliced mushrooms (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: Start by patting the chicken thighs dry with paper towels. Season generously with salt and pepper on both sides.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Cook for about 5-7 minutes until the skin is golden brown. Flip and brown the other side for another 5 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, reduce the heat to medium and add diced onion. Sauté for about 3 minutes until softened, then add the minced garlic and cook for another minute until fragrant.

        Add Liquid Ingredients: Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Stir in the heavy cream, smoked paprika, dried thyme, and Worcestershire sauce. Add hot mushrooms if using.

          Simmer the Chicken: Return the chicken thighs to the skillet, nestling them into the sauce. Bring to a gentle simmer, cover, and reduce the heat to low. Cook for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is tender.

            Finish and Serve: Once the chicken is cooked, remove the lid and let it simmer uncovered for another 5-10 minutes to thicken the sauce. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
