Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, chopped into bite-sized pieces

1 cup teriyaki sauce (store-bought or homemade)

2 cups white rice (jasmine or basmati)

4 cups water or chicken broth

1 tablespoon vegetable oil

1 tablespoon cornstarch (optional, for thickening)

2 green onions, chopped (for garnish)

1 teaspoon sesame seeds (for garnish)

Salt and pepper to taste

Steam-fresh vegetables (like broccoli or snap peas) for serving (optional)

Instructions
 

Cook the Rice:

    Rinse the white rice under cold water until the water runs clear. Combine the rinsed rice with 4 cups of water or chicken broth in a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.

      Prepare the Chicken:

        In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped chicken thighs and cook, stirring occasionally, until golden brown and cooked through (about 6-8 minutes). Season lightly with salt and pepper.

          Add the Teriyaki Sauce:

            Pour the teriyaki sauce over the cooked chicken, stirring to coat. If you prefer a thicker sauce, mix the cornstarch with a little water to create a slurry and add it to the skillet, stirring well until the sauce thickens (about 2-3 minutes).

              Serve:

                Fluff the cooked rice with a fork. To serve, scoop a generous portion of rice onto each plate and top with the teriyaki chicken. Garnish with chopped green onions and sesame seeds. For a complete meal, add some steamed vegetables on the side.
