1 lb (450g) lean beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

3 medium potatoes, diced (about 1.5 cups)

2 stalks celery, chopped

1 can (15 oz) diced tomatoes, undrained

4 cups beef broth

1 cup green beans, trimmed and cut into 1-inch pieces

1 teaspoon dried thyme

1 teaspoon dried oregano

2 bay leaves

Salt and pepper to taste

Fresh parsley for garnish

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and sear it until browned on all sides, about 5–7 minutes. Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and garlic. Sauté for about 3 minutes until the onion is translucent.

      Add Remaining Veggies: Add the carrots, potatoes, and celery to the pot. Stir for another 5 minutes to slightly soften the vegetables.

        Combine Ingredients: Return the browned beef to the pot. Add the diced tomatoes (with their juice), beef broth, green beans, thyme, oregano, bay leaves, salt, and pepper.

          Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 45 minutes, stirring occasionally, until the beef and vegetables are tender.
